Bicol Express Recipe

Ingredients:

  • 1 kilo pork, cut into cubes
  • 1 cup alamang
  • 3 - 4 cups of fresh coconut milk
  • 1 medium size onion
  • 1 medim size ginger
  • 4 cloves of garlic
  • Hot chili (Japaleno pepper)
  • 10 string beans (cut 1 inch long)

Procedure:

  1. Combined ingredients except chili in string beans in a pan with a medium heat flame.
  2. Stir continuously
  3. Let the pork become tender.
  4. Once the pork in tender enough, put the string beans
  5. Put chili to have a spicy taste
  6. Add salt of still needed
  7. Serve hot

Bicol Laing Recipe

Laing is Bicolano’s all-time favorite. This is one of the best cuisines that Bicolano’s are really proud of.

Ingredient:

  • 1 medium size onion (minced)
  • 3-5 cloves of garlic (minced)
  • Medium Ginger (minced)
  • Salt
  • Hot chili (jalapeno pepper)
  • alamang
  • ¼ pork (cut into cubes)
  • 2-3 glasses of fresh coconut milk
  • 1 bundle of dried laing leaves
  • Best with Libas leaves

Procedure:

  1. In a clean pan, put coconut milk, onion, garlic, ginger, alamang, & pork together. Put it in a medium heat stove.
  2. Continue stirring (so the coconut milk will not compound) until the pork become tender.
  3. Put salt (the amount will depend on your tasted)
  4. Put the laing leaves (if you have libas put it as well)
  5. Once the laing leaves is cooked enough put the chili.
  6. Let the coconut milk oil comes out.
  7. Serve hot.
